Does anyone know where you can buy *good* chai powder?

No - but I have an awsome chai recipie taught to me about 10 years ago by an original chai-tent hippy festival person!

You need: star anise, cloves, cinnamon, cardamon pods - take a few of each and crack in a motar and pestle (don't mush them up, just crack to release the essential oils). A little piece of fresh ginger is also good... Take as many teaspoons of good black tea as you are making cups of chai plus one! Put in a pot with the spices and the cold water - however much you want but it will reduce. Add a cup of soy milk (it actually seems to work out nicer than cow milk)... slowly heat till it's nearly boiling - the longer you cook it the tastier!

Add honey to taste and strain!

I love chai - and have been making it for years - I was so surprised when it went "main stream" as I always thought it was a bit too labour intesive to be made to order rather than stewing all day at home/ chai tent.

Everyone develops their own chai recipies and favourites - but this is generally how I make mine!

Maybe next shoot I'll make some up beforehand ;)

god that sounds like a great recipe, thankyou so much for sharing!!. it's not exactly wake up and stumble to the kitchen and prepare quickly type drink, but yummy nonetheless. i wonder how long it would keep in a glass jar?

Everyone's taste is different, but I quite like the Chai powder the cafe's in Border's Bookstores use, and its available in take home tins.

There is one in Macquarie Centre in North Ryde, I work accross the rd from it, and apparently one in Hornsby, the City & Bondi too.

Horrible places, I go in for one book, and walk out hours later full of Chai and with an armload of books ;)
